). Vineyard 7&8’s Spring Mountain Estate Cabernets require aging to show their best, and so it is with this 2009. It’s dry, tannic and unrewarding now due to its astringency and acidity. But it has a terrific heart of blackberries and minerals that’s vast and rich—indicative of great growing conditions. It should begin to come into its own after 2015.
