Few winemakers in California understand acidity better than Randall Grahm, and he provides plenty of it in this brilliantly clean, bone-dry wine. It cleanses the mouth with scoury flavors of lychee, lime, nectarine, minerals and peppery nasturtium, with a foresty, resinous quality suggesting pine cone.

A Rhônish blend, with Barbera and Zinfandel, it showcases three of Randall Grahm’s signatures, namely, it’s refreshingly dry, invigorating in acids, and minerally-herbal-subtle in flavor instead of the intensely ripe fruit that usually marks California. This is a complex wine that will stand up to complex fare.

A terrific wine whose slight residual sugar of 0.8% is balanced by crisp Monterey acidity that’s so firm, the wine finishes dry. Teases the palate with tangerines, Mandarin orange blossom, bosc pears, honeysuckle and vanilla, undergirded by a stony minerality.

A brilliant white wine, very tart in acidity, with mineral flavors that make your mouth water. The flavors veer toward bright, tart citrus fruits, with suggestions of Chinese five-spice. The grapes were biodynamically farmed, which may partially be why the wine is so pure.

Randall Grahm continues to explore the possibilities of Sangiovese, the most difficult red wine to get right in Calfornia. As always, it’s acidic and dry, with black cherry, currant, plum, wild herb and tobacco flavors, and hints of orange zest and licorice. A pretty, polished and sophisticated red wine at a good price.

A blend of six varietals including Cabernet Franc and Syrah, this wine is utterly distinctive. The raspberry liqueur aroma has a meaty edge complemented with things like ground coffee, violets and white chocolate. All these flavors mingle in the mouth, and yet the wine is dry. From this big vineyard in the southern part of the Salinas Valley, a wine amazingly high in acidity, with bright lime, grapefruit, passionfruit, melon and hay flavors. The alcohol is well under 13 percent, but the wine is absolutely dry. Try as an alternative to Sauvignon Blanc.
