Tastes tannic and chewy, even at the relatively advanced age of 7-plus years. There’s a sweet core of cherry fruit and grilled meat that’s delicious and savory, brightened by fine acidity. Charred oak notes add more nuances of grill and toast, suggesting pairing with the salty, umami richness of charred beef.
