A relatively full-bodied Margaret River Cabernet, Hay Shed Hill’s 2008 features velvety tannins and a lively mix of cassis, mint and cedar. Although approachable now, it should age well through at least 2018.

This softly structured Cab would make a fine steak house wine. Some leafy, tobacco-like notes keep the cassis and vanilla from seeming too simple and fruity, while the medium body keeps it from seeming overly rich or heavy. Drink now-2015.

An elegant wine that is appealing for its pure mineral expression. There’s papaya and lemon fruit here, with a sophisticated caramel undertone that carries over to the medium finish. Drink now or hold a few years for more nuance.

Blended with 14% Tempranillo, this Shiraz offers an expressive nose of tar, raspberry and vanilla, followed by flavors reminscent of raspberries, dark toast and espresso. It's medium in body, with an approachable, open-knit texture and a long, albeit somewhat woody, finish. Drink now-2015.
