Across the lineup, Januik’s Cabernets are steely, sharp-edged and cellar-worthy. Which makes this Ciel du Cheval bottling, which is usually that way to begin, perhaps the most archetypical of them all. Think black cherry with nerves of steel, set on a foundation of pure rock. Stick it in the cellar for another decade or more—if you can keep your hands off it.

This vineyard-designated Merlot includes 11% Cabernet Sauvignon, also sourced from Klipsun. Classy from the get-go, this is limned with notes of graphite, mineral and cinnamon, with dense black-cherry and cassis flavors that anchor the core. Sharp, dense, tight and oaky; this has a lot of plump pineapple, apple and sweet citrus fruit. There is a wonderful mix of spice, herb, fruit and acid. Deep and focused, this wine has serious guts and the flavors last a good long time.

Wonderfully fragrant, this wine really delivers the goods. Candied citrus fruits, juicy and rich, with an extended middle palate that brings in some skin flavors and hints of stone and earth. The finish extends for a full minute or longer.
