Novella’s best wine has been Petite Sirah, which thrives in the dry heat of Paso Robles. With a little Zinfandel and Sangiovese for complexity, this is a very dry, crisp wine, with deep flavors of cherries, plums, dark unsweetened chocolate, espresso and peppery spices.
