Made from the blue agave plant, tequila holds its historic origins in Mexico. While Mexico is legally designated as the sole producer of 100% agave tequila, mixto (blended) tequilas can be produced internationally. A clear spirit upon distillation, tequila can achieve a darker color over time, or from the addition of caramel or other added flavors. There are four types of tequila that are distinguishable by age—Silver or blanco (white) tequila is generally un-aged; gold or joven (young) tequila is un-aged tequila flavored with caramel; reposado (rested) tequila is aged anywhere between 2-9 months, and añejo (old) tequila is aged for 1-3 years. After 3 years in the barrel, an aged tequila is considered to be "extra añejo.” Silver and resposado tequilas are primarily used for cocktails, while longer-aged tequilas are often reserved for sipping straight up.
