This is sweet Amontillado in fine form. The nose is centered around a core of molasses and brown sugar, while the palate bubbles with maple and toffee. Yes, it’s a sweeter-styled Amontillado, but the sugar fades on the palate, leaving only the complex residue of caramel, espresso and burnt cinnamon. It’s a touch overbearing if you get too close, so sniff and taste lightly to reap in all the caramel, nutmeg, butter cream and raisin this wine has to offer. It’s thick, slick and delivers a kick. Angular but super clean. The nose shows a little sharpness, but that’s an indicator that what’s to come is tight and lasting. In the mouth, this is a huge, defined wine. It tastes of almond, lemon peel, apricot and even browned butter. By the time the finish concludes, mushroom and more almond have entered the picture. Top-notch manzanilla, plain and simple. What's not plain and simple is the fact that this is so pure and smooth that it dances across your palate. Pure and intoxicating on the bouquet, with lush, primal aromas of molasses and raisin. So rich and black that you almost need a knife to get through it, but it’s not sludge in a glass.
