The Loin de l’Oeil is the local white grape of Gaillac and is very happy to produce sweet botrytized wines. This is rich, full of botrytis flavors along with fig, sultana and apricot. Age the wine for 2–3 years, but it is ready to drink now.

Ame means the spirit, the soul, and Alain Rotier believes this wine expresses the true nature of his Gaillac estate. On that basis, it’s a place of great perfumes, coming through in the wine from wood as well as chunky black fruits. It is a relatively soft wine, the concentration in the dense fruit rather than the tannins.

This is a fascinating wine, just by reading the list of grapes in the blend: Duras, Braucol, Syrah and Cabernet Sauvignon. The first two, local grapes, lend a rough edge of tannins, which demands aging, but also give flavors of herbs, wild thyme and solid meaty character. The roundness comes from the ripe Syrah, which adds perfume.
