A sharp, smart wine, elegantly put together. Flavors are lemons and herbs, which are balanced by crisp acids and smooth tannins. Does just what you want a dry, tart white to do: wake up the palate with clean, fresh flavors. —S.H.

Ripe and creamy, with fleshy peach and melon aromas brought to attention by notes of jalapeño and grass. Like the nose, the palate deals mostly ripe melon and peach flavors with touches of grass, white pepper and greens. Bulky and full.

DCV3 is the totally unromantic vineyard name. Only fruit from Stare’s original Sauvignon Blanc plantings go into this wine, which sees no oak at all, yet does show a hint of smokiness on the nose. Melon and passion fruit aromas and flavors are lean and light, finishing crisp and clean.
