The Schramsberg sparkling wine owners jumped into the Cabernet game a few years ago, and it was an impressive debut. The ’03 shows they’re in it to stay. It’s a tight young mountain Cabernet, pert in chewy tannins and acids, yet beautifully structured, with impressively ripe flavors. Despite the powerhouse fruit, it’s elegant. This ’06 continues the winery’s recent successes in Cabernet. It’s a lush, opulent wine. In its youth the smoky oak stars, along with waves of blackberries, black currants, plums and a spicy, meaty note suggesting bacon. Beautiful now, although tight in tannins, it should develop bottle aromatics and complexities for at least the next six years.  — S.H.  (12/15/2009)

From this longtime bubbly producer (Schramsberg), a Cab that shows its mountain origins in the noticeable tannins. That doesn’t mean it’s not drinkable now. It is, because the tannins are ripe and sweet. It does mean that this is a wine to age. Finishes long and harmonious. Now through 2010 and beyond.  — S.H.  (12/31/2004)

Very lush and ripe in blackberry, cherry, currant and cassis flavors, with an oaky overlay, and there’s a minerality toward the end that smacks of the soil. With an acidic jamminess and fierce tannins, the wine feels austere and remote. Give it 6 or 7 years in the cellar to come around.  — S.H.  (12/15/2010)

Only the second Cabernet release from this famous (as Schramsberg) bubbly house. This is a dense, dry, tannic mountain Cabernet, rich and long in blackberry fruit. It’s drinkable and probably at its best now due to soft acids.  — S.H.  (10/1/2005)

Enormously rich in blackberries, cherries, chocolate and roasted almonds, with lots of smoky, sweet caramelized new oak. Almost like granola candy now. The tannins are firm, as befits a Diamond Mountain wine, but refined and velvety. Delicious, but not showing much complexity. Could be a teaser. Try in another six years.  — S.H.  (12/1/2011)

More tannic than in previous vintages, and not as immediately rich, this Cab-dominated Bordeaux blend will benefit from decanting. It needs some air to open up and reveal its heart of cassis. J. Davies 2005 Cabernet Sauvignon (Diamond Mountain)

Made in a drier, more tannic style compared to some top Napa Cabs, this Bordeaux blend is elegant rather than opulent. It has red currant, licorice and new oak flavors framed by hard, astringent tannins. Could develop with bottle age after 2011.  — S.H.  (12/31/2008)
