This smooth, stylish wine is on the way up, as evidenced by the two-point bump it’s receiving from its last review, in December 2004. Today it’s round and full, with aromas of hay and popcorn that draw you in. Layered through the middle, with expressive white fruit, dryness and sweetness all in one. Light, airy and dusty on the nose, with apple and melon along with a touch of yeast. The palate is plump and healthy, with a good bead, nice acids and cidery, lightly briney apple and green fruit flavors. Shows some complexity beyond what’s normal for Cava.

Surely one of the better bargains this year, and with 60,000 cases produced, it can’t be that hard to find. This Cab-Tempranillo is full and balanced in the mouth, with red fruit and a healthy dose of oak. Its tannins are most perceptible on the finish; letting it rest a year or two may coax more than mocha and light, jammy fruit out of the nose. Best Buy. —D.M.

Red plum and cherry fruit isn’t overblown or jammy, by any means. On the contrary, there’s an element of plum-skin tautness that keeps the wine a little austere, in terms of flavor.
