Négociant Xavier Copel, although based in Bordeaux, makes and bottles his Cahors in the region of production. This is the top of his Cahors range, a broad-brush wine, with rich, almost sweet fruit, acidity and layers of equally sweet wood. It’s big, but it works.

A wine that emphasizes its minerality, the tannins almost stony in character. Big ripe blackberry jam flavors roll around the glass, but it remains a dry wine, with a risk that the texture will get too fat.
