This sparkling wine is named for the Benedictine monks from the Abbey of Saint-Hilaire, who invented France's first sparkling wine back in 1531. (Don't confuse it with another sparkling wine from the Loire Valley, also called St.-Hilaire; this is the original, made from the local Mauzac grape.) It is delicate and elegant.

Saint-Hilaire 2005 Semi-Sweet Sparkling (Blanquette de Limoux)

Hints of sherry and nuttiness come through on the nose, along with notes of ripe Granny Smith apple and citrus resin. The mouth shows a bit more ripeness by way of sweet nectarine slices and tangerine citrus. The moderate acidity keeps the sweetness from going over the top.
