Just what a kabinett should be, from the state wine estate based in the monastery of Kloster Eberbach. There are crisp, lightly sweet fruit flavors, delicious acidity and flavors of ripe plums. This is a finely balanced wine, with acidity supporting the ripe fruit. —R.V.

Another classic from Kloster Eberbach, which seems to be on form after some dull years. There is fresh fruit, with a yeasty touch showing youth. Ripe and full, it is dominated by flavors of green plums and white currants. This is a wine for aging. —R.V.

Pale to the point of looking almost watery, this subtle wine smells of rosewater and light peaches. Wan but elegant, balanced and dry, it is refreshing and a bit lower in alcohol (11.5%) than most of the rest. If you want restrained styling, which is fine for sipping, this is a good bet. —P.G.
