The wine is fantastic, albeit tannic. It’s not a gushy one to open tonight. The tannins have a dry astringency, but even so, you can taste fabulously ripe blackberries, black cherries and currants. This wine should begin to come into its own next year and hold for many years.  — S.H.  (9/1/2008)

Textbook 2006 Mise en Place Cabernet Sauvignon (Oakville)

Coastal specialists Jonathan and Susan Pey move inland to warm Napa to craft this Oakville-grown Cabernet. It’s quite a good wine, although not on a par with the spectacular 2005. Every effort went into ripening the grapes to succulent blackberries and black currants, with new French oak adding notes of smoke and vanilla. Drink now–2012.  — S.H.  (12/15/2009)

Tastes young and vigorous and almost rude in youth, offering strong, extracted blackberry, cherry and raspberry flavors. The tannins have sharp elbows, and the oak is entirely unintegrated. Seems altogether immature. Give it a good five years in the cellar, and try again.  — S.H.  (4/1/2011)
